What is Oat Flour? It’s basically oats ground into a powder form. It’s an excellent wheat free alternative and a more nutritious option. If gluten-free is required, you can purchase gluten free oats. Alternatively, Bob’s Red Mill offers both options.
Here’s the recipe!
Ingredients
- 2 ½ cups oat flour
- 2-3 large overripe bananas
- 2 large eggs lightly beaten
- 1/3 cup raw honey *I love wholesome!
- 3/4 cup whole milk
- 2 tsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 2 tsp nutmeg
- muffin tray
Directions

Preheat oven to 350 degrees.

Place oats in a food processor and blend/pulse until they reach a rough, flour like consistency.

Mash bananas well, they should have no lumps.

Add eggs, honey, milk and vanilla. Mix to combine.

Add dry ingredients to wet ingredients and mix until just incorporated. Allow these to sit for 5-7 minutes so everything soaks well.

Optional: Fold in approximately 1/2 c fruit, raisins or nuts. *I used mini black currants

Scoop into muffin tin, lined with muffin wrappers (makes ~20 muffins)

Bake at 350 for about 20, a fork inserted in the center of a muffin should come out clean.
