Recipe: Cocoa + Coconut Chips Energy Bites

I have been seeing TONS of recipes for energy bites all over the internet.  Sometimes I even get the targeted video recipes from Health or Tasty Buzzfeed.  A recent one from Well Done inspired me to concoct my own.  We always have dates on hand from visitors coming from India who transit through the Middle East so I decided to not waste them and create this recipe.  Quite honestly, I wanted to see if I would really like them or if I would be over them pretty fast. I was quite surprised that I enjoyed them but next time I will use less cocoa powder since the taste was overpowering.

 

Ingredients

12 dates, chopped

2/3 c Natural Peanut Butter (I used the Peanut Butter Pro from Nuttzo)

1/3 c Unsweetened Cocoa Powder

2 Tbsp water

1 Tsp vanilla extract

1/4 Tsp Kosher salt

2 Tbsp Ground flaxseed powder

1/4 cup Toasted coconut flakes

1/4 cup chopped almonds and pecans

Directions

Pulse dates in food processor until almost paste like. Add peanut butter, cocoa,  water, vanilla, salt, coconut chips and flaxseed powder; process until the paste sticks together. Move the mixture into a bowl and begin to roll each portion to be just a tad smaller than a golf ball.  Roll each ball in chopped nuts to coat. Chill until firm, about 30 minutes.
